Angela’s Nourishing Chicken Congee


1 organic chicken

3-4 fresh garlic cloves

1 brown onion, roughly chopped

3 cinnamon quills

5cm knob fresh ginger

5 start anise

1 tsp cloves

6 whole cardamom pods

1 tsp coriander seeds

2 bay leaves

1 tbsp pink salt

2-3L water (adjust depending on how much you want to make and the size of your pot)

3 cups brown rice

A couple of cups of any fresh vegetables that you have on hand (carrot, celery, zucchini, peas, bok choy and Asian greens, celery, oyster mushrooms, leek

Another 5cm knob fresh ginger


  1. Put all ingredients (except rice and fresh vegetables) into the slow cooker or a heavy based pot and cook on low for 6 hours
  2. After the 6 hours, remove the chicken bones and carcass
  3. Add brown rice and cook on low for another 60 minutes
  4. For the last 10-15minutes add all other fresh vegetables to soften slightly and additional ginger
  5. Enjoy warm
  6. Any left overs keeps well in the fridge for a few days, or it freezes really well
