Healthy Muesli Bars

Serves 10 bars

Ingredients:

  • 135g or 1 ½ cups rolled oats – or any muesli
  • 112g or ½ – 1 cup almonds – loosely chopped
  • 84g or ¼ cup of maple syrup or rice malt syrup or honey
  • 64g or ¼ cup of nut butter – peanut or almond works best
  • 220g or 1 cup of dates, pitted – soak in hot water for 12min and then drain if not using medjool
  • 1 teaspoon of vanilla extract
  • Optional: add in 2 Tablespoons of desiccated coconut, 1 Tablespoon of Chia, Chocolate chips

Method:

  1. Prepare an 8 x 8-inch baking dish or pan lined with baking paper – set aside
  2. Combine the oats, almonds in a large mixing bowl – set aside
  3. In a blender, wiz up the dates until almost smooth – a little lumpy is good!
  4. Warm the maple syrup and nut butter in a saucepan over a low heat
  5. Transfer all ingredients into the bowl with the oats and almonds and mix until well combined
  6. Once mixed, place into the prepared dish / pan and press down firmly until flattened – place in the fridge or freezer for 20min until firm.
  7. Remove from freezer and cut into 10 x even bars
  8. Bars will last a few days if kept in an airtight container or in the freezer
