This is the perfect recipe to enjoy during a detox program, on a warm summers night, or an impressive yet simple option to take to a dinner party.
Serves 4-6
Ingredients
1 block organic firm tofu, drained and dried
2-3 large organic tomatoes
Bunch of fresh basil leaves
Balsamic vinegar
Sea salt and freshly ground black pepper to taste
2 tablespoons fresh chives (or any other fresh herb), finely chopped
Extra virgin olive oil, to serve
Method
Slice tomato and tofu into similar sized pieces (aim for approx. 16 slices)
On a serving dish place alternating slices of tomato, tofu and basil so they are slightly overlapping. Just before serving drizzle with extra virgin olive oil, balsamic vinegar, and sprinkle with sea salt, freshly ground black pepper and finely chopped chives.
