Yummy Nut Breakfast Granola
Yummy Nut Breakfast Granola
Healthy breakfast parfait with yogurt, homemade granola and fresh bluberries in glass jar
Ingredients:
2 cups of coconut flakes
1 ½ cup of seeds – a mixture of pumpkin, poppy, chia and sunflower seeds is ideal
1 cup pecans, chopped roughly – any nuts or a mixture of nuts will work
1/3 cup maple syrup or rice malt syrup
¼ cup melted coconut oil
½ teaspoon of sea salt flakes or Himalayan pink salt
2 tablespoons of cacao powder
2 tablespoons of vanilla extract or powder
1 teaspoon of ground cinnamon
Method:
Preheat over to 125 degrees Celsius
Add all ingredients to a large mixing bowl and combine well
Line a flat tray with baking paper
Spread mixture evenly on tray
Bake for 30 minutes – turning the granola halfway through to ensure even cooking
Remove from oven and let cool before transferring to a airtight container or glass jar
Granola will keep for one week.
