Yummy Nut Breakfast Granola

Healthy breakfast parfait with yogurt, homemade granola and fresh bluberries in glass jar
Ingredients:

  • 2 cups of coconut flakes
  • 1 ½ cup of seeds – a mixture of pumpkin, poppy, chia and sunflower seeds is ideal
  • 1 cup pecans, chopped roughly – any nuts or a mixture of nuts will work
  • 1/3 cup maple syrup or rice malt syrup
  • ¼ cup melted coconut oil
  • ½ teaspoon of sea salt flakes or Himalayan pink salt
  • 2 tablespoons of cacao powder
  • 2 tablespoons of vanilla extract or powder
  • 1 teaspoon of ground cinnamon

Method:

  1. Preheat over to 125 degrees Celsius
  2. Add all ingredients to a large mixing bowl and combine well
  3. Line a flat tray with baking paper
  4. Spread mixture evenly on tray
  5. Bake for 30 minutes – turning the granola halfway through to ensure even cooking
  6. Remove from oven and let cool before transferring to a airtight container or glass jar
  7. Granola will keep for one week.
